Taken from lunch at the restaurant at the Twin Bridges. We had the local specialty, ham hock: red-died skin and fat covering very tender meat. The waitress teased it into pieces with chopsticks; we teased off the fat. In one of Zhouzhuang's hundred ham shops we saw it cut up with scissors. We also had delicious custardy tofu and soup with dumplings.
